Quick post..but just had to share.
Nocturnal nature has hit hard and I have struggled the last two weeks to sleep when most of the world is sleeping. Yesterday I gave up. I went to bed a 6:30pm and thus woke up at 11pm.
I have gotten a lot done. And started dinner. And this is beyond a quick fix dinner.
Now I have made no secret to the fact that the kitchen and I are just not friends. Never really was taught to cook and honestly didn’t have much desire too. Paul is an excellent cook and he picked up that slack. But now I find I am looking at recipe websites.
I started baking seriously again two years ago when I needed a creative outlet after surgery kept me from my studio for awhile. And I am proud to say that my kids now ask for my special “Ginger Crack” cookies. (don’t worry…one of the “to do” things this month is to make a recipe page on the website…Ginger Crack will be there)
I just put together my own version of Cranberry Pork Roast in the slow cooker. Made some modifications. And didn’t have cranberry jelly but did have a bag of whole cranberries so cooked them down for an hour with some water and sugar. YES! I did this.
Ok…maybe not an earth shattering to most for me who has a motto of “I can mess up boiling water” this is truly noteworthy.
8AM UPDATE: So apparently at 3am when I wrote this blog I forgot to push post. So I am happy to report we woke up to a lovely aroma and it will be mashed potatoes and cranberry pork for lunch/dinner!
